Southern Italy/back door tours/ boat rental /

We will be traveling in June or July with 2 teens (15 & 18) We've decided on Rome & southern Italy because the kids want to see Pompeii. Leaning towards Sorrento as a base. We will probably do 2 days in Rome (Vatican/Colloseum/etc - we are not big museum or art people) I've read the RS Italy book and Back door. We definitely are more "back door" travelers and like to have some adventure with cultural immersion. Looking for possibly an island hopping boat rental and/or food tours or cooking classes - how the cheeses/breads/pastas made - how the lemons/olives/etc grown.... I'm trying to avoid more than 2 bases (Rome & Sorrento) We will be there about 8 days total.
Suggessions?

Ann, If you are considering Sorrento, you should definitely check out the pasta, pizza and mozzarella cheese making programs offered in Sorrento by Ciao Laura. We were also traveling with our teens and booked both the Pasta cooking class and Lotsa Mozzarella cheese programs (on separate dates) and they were both a purely delightful experience. In addition to visiting a local cheese factory, the hands-on portion of the cheese making program and the pasta class are both held in a lovely outdoor garden which I would imagine would be beautiful in the summer. The classes are informal and designed to offer a sense of the local flavor. Our kids cannot stop taking about "how cool it was" to make the fresh food from scratch and eat it and we simply did not want to say goodbye after spending this very precious time with a local family who embraced us as their own.
