I am trying to visit Capri for a day but need to make it back to Sorrento by 5pm to catch the Marrozzi bus to Rome. Am I trying to do to much?

You MIGHT be able to pull that off, but I'd suggest waiting to see Carpi on a future trip. You'd have to be in such a "fast-forward" on the island, you'd probably not find it very relaxing.
