Florence of course.
It's between Rome and Venice.
It's the only place in Tuscany from where you could visit Venice on a day trip, because it's served by high speed trains (all others would not allow you enough time in Venice).
There will be tourists however. But which town in Tuscany that is worth visiting does not have tourists in July? You tell me.

I agree you can't avoid tourists in July. Florence is your best bet. Staying in a place like Cortona is a good alternative but it will make your day trip to Florence really long as you would have to drive into Florence to get the train. You can take and early morning Freccia train to Venice (consider maybe flying out of Venice or Milan).

If you went to Milan you could easily go up to the Lake district (small towns but still touristy) for a couple days then take the high-speed train from Milan to Venice. Either one has a major airport.

Agree, Tuscany is touristy in July. Certainly Florence is, but you should put up with it if you haven't been there.

A couple of thoughts. If you don't mind being off the beaten path how about Montefalco in Umbria? You will need train service to do a day trip to Venice so that restricts a bit. Montefalco doesn't have easy train service but it lacks a lot of tourists.

Lucca has great train service to Florence, then high speed to Venice, but is touristy. Montecatini Terme, great train service but not as touristy. Then you could go to Bologna, lots of tourists, and a little better is Modena or Parma.

Montefalco (in Umbria) is beautiful, very small, agriculturally focused. No train service but a few buses daily (Sunday, not so much).

If you're not committed to its being a Tuscan town, Emilia Romagna is not overwhelmed with tourists and has lovely towns with good connections to Venice. Parma, Ferrara, and Bologna are all well worth a visit with history, palaces, churches, art museums, wonderful walking areas without cars, and fabulous food.

Seconding lizth's suggestion that if you're not committed to Tuscany, one of the towns in Emilia-Romagna would be a good choice. Also suggest that if you haven't made reservations yet, you consider flying into Milan rather than Rome.

How many days do you have? Why not stay in Venice itself? I think its a lovely city worth some time itself to explore

About your day trip to Venice from Tuscany --that's a long drive if you plan to drive and see anything on the same day.
