I'm professional chef and have not been to Italy in a decade. I would love to find a place to stay where I could get a kitchen as the market just amazed me (it gives me an reason to buy a new knife too while I'm there!) I'd really like to take advantage of it. It's myself and my parents who are in mid-sixties but in good shape. I have no problems sleeping on a couch. I was there years back and it just killed me to see all these wonderful things but I didn't have a place to cook. In the culinary field, if you are good and you are very passionate, you'd love to see just what you could come up with there.
there are lots of apartments in Venice for rent. I booked mine through www.homeaway.com In fact, you should have no trouble finding a one or even two bedroom apartment with full kitchen for less than the cost of a triple hotel room. The apartment I found is right by the Rialto Market.
there are several agencies. we have used the folks lately with good results. www.veniceapartments.org these people also get very good reviews. www.viewsonvenice.com We usually travel with my dad who is almost 90 and he really enjoys staying in apartments instead of hotels. All the places we have stayed in have had kitchens. They usually have an assortment of pots and pans and table settings.

It was quiet, centrally located, and not too far from the market. The kitchen was what I think was an Ikea kitchen. It did have pots and pans and such. Notice the 2 comments on the website.
