I will be traveling from the Rome airport to Monterosso on a Saturday in June. My flight arrives at FCO at 10 AM. I’ve downloaded the Trenitalia app and searched for the best way to make the journey. I’m finding many of my preferred times and itineraries are marked as sold out. Are they truly sold out this far in advance or is it that they have not posted those routes yet? I am a senior, but don’t have mobility issues and I will be traveling solo until I meet my family in Monterosso. Therefore, I seek the easiest, not necessarily the cheapest route. Any advice is welcome.

Can you tell us exactly what day in June you're wanting to travel? Schedules update around June 11-12 so they simply may not be showing yet. The usual advice is to look at current schedules for the same day of the week you're looking to travel; they likely won't change. If they do, it shouldn't be by much.
Thank you for the reply. I am traveling on June 14… So just outside of the updated schedule I suppose. I will check back in a day or two to see if the itineraries have updated.
I doubt times/itineraries showing as sold out or not available will be any different in the next couple of days. Look at schedules for a Saturday before April 14 to see what they look like. As above, they're unlikely to change much if at all for the June Saturday you're looking to travel.
To add: in case of a flight delay or cancellation, it's usually advised NOT to pre-purchase rails tickets for the same day one arrives by air. At the very least if a "fast train" is involved with assigned carriage and seating, buy only tickets that allow for same-day change.
One more note to illustrate the above?
I just checked the schedules for Sat. June 7 and there's an 11:45 train from Roma Termini to Monterosso with one change (La Spezia) that arrives in Monterosso in 4 hours, 20 minutes. That same journey should be become available on the 14th. You might be able to make it if everything goes according to plan (collecting checked luggage, if you have any), passing through immigration, grabbing the soonest Leonardo Express train to Termini...)

The best advice I can give is TRAVEL LIGHT. The Monterosso train station doesn't have an elevator. And there are a lot of stairs between the boardwalk and the tracks. I did this route last year.
Lets keep this simple and stress free. First stress reducer --- Trains rarely sell out especially at that time of year. So don't worry about catching a train. Once you are off the plane, through immigration (passport control) and collected all your luggage head to the airport train station. Signage is good. At the ticket window (he/she will speak good Englis) buy a ticket to Monterosso. The will include a ticket on the Leonard Express to Termini and a ticket from Termini to Monterosso. I am not familiar new validation process to the LE tickets. Just ask the ticket agent. I think you just use the ticket to pass through a gate. Watch, see what others are doing.
I would put at least hour between arriving at Termini on the LExpress and boarding for Monterosso. Gives a little time to find the Monterosso platform, maybe another trip to the restroom, perhaps you can get some snacks and a take away lunch for the train. Platform assignments are not completely firm until about 20 mins or later prior to departure. So keep an eye on the departure board and know your train number. The train SHOULD BE waiting for you since is most likely starting in Rome. About a quarter till find the train at the platform and ask any of the conductors for assistance in find your can and seat. If running second class, more than adequate, the second class cars could be further down the line. Once on the platform don't afraid to ask anyone or everyone. The vast majority will be friendly and helpful. Find your car, settle in, and fall asleep.
