I have plans for a vacation starting in Greece, ending in Italy, perhaps Switzerland. Wondering what suggestions anyone may have for a SIM card and provider that I can use the data in all of those countries.

I suggest you read through the posts under technology here. Answers depend on what you want to use your phone for.

In Italy and Greece you'll be "protected" by the EU Directives about limited or zero roaming costs in EU countries.
Be aware that Switzerland is in Europe but not in the EU. The moment you cross the border, you could start paying the extortionate per giga/text/minute roaming fares. You'd better Ask about Switzerland before paying for the SIM.
WhatsApp has almost killed texts; incoming calls and messages are always free in Italy, but if you need to send texts home read carefully what's included and what isn't in your monthly plan. And, if texts are not included, switch off the iPhone's option to automatically turn iMessages into texts when there is no access to the Internet!
