if you only had one day to see a hill town, which would it be?
Siena
For me, Assisi is a 1/2 day visit - been there twice. And I may not go back any more. I spend two days at Siena and will go back for 3 more days next trip. It just has much more to see. But if you are interested in the story of St. Francis or St. Claire, Assisi is like a mecca to many.
It would depend on where you are traveling from and to after the visit. Both are superb visits. However, Assisi is our favorite. Note, however, that Assisi is 2.5hrs by train from either Florence or Rome. Siena is an hour closer to Florence but an hour farther away (3.5hrs) from Rome.
There is more to do in Siena but both are beautiful.
Siena
Assissi. Loved Assissi, did not like Siena at all.
Both are lovely town, so it depends on your interests. I've been to Assisi twice, last time for 8 days, and far prefer it to Siennamostly because of the amazing art in Assisi, and really lovely views from so many parts of the town. I also find the easy train access to Assisi preferable logistically.

As much as I love Siena, if I only had one day it would be in Assisi. Besides the art, the history, the views there is also the atmosphere or environment. St. Francis was not an accident. He simply responded to his environment and sought for peace and harmony among people and in nature. I am in Assisi for 2 weeks every year with an international music festival. I hear the same thing every year from our new performers: I am changed for being here. But of course I am spending a week in Siena too - so much to see that a day doesn't do it.
