Thanks to all who've commented. Cemented itinerary and looking for eating suggestions, day trip tour/guide/experience suggestions.
We like fish, vegetables, pasta, fruit cannoli, gelato, coffee. Going in mid April. Don't know if any fruit will be in season in the markets. I will sample the pulpo too. Maybe a food tour too or cooking class?

Some dining recommendations…
Ortigia:
Locanda de Collegio: we ate here several times. Excellent fish as well as pizza, nice friendly vibe, excellent service.
Ristorante Regina Lucia, entrance to lower wine cellar and ristorante is in a far corner of Piazza Duomo. One of the top restaurants in Ortigia. The food and services merit the cost. We ate there twice.
Avoid Ristorante Don Camilo at all costs. We had one of the totally most horrible dining experiences we have had anywhere. It began with the Maitre d’ saying we didn’t have reservations which we did. He was loud , screaming at us, rude. Someone else on the staff told him that we did indeed have a reservation! Finally got a table. Portions were minuscule and
we’re not tasty at all. We left much uneaten. Loads of tour groups. I can’t believe this place was recommended to us by a knowledgeable diner or that it is still open!
And to Noto where we had one of the best meals of our trip! Ristorante Manna, creative preparations, an experience, and everything was delicious! Excellent service. We had a reservation elsewhere and our hotel said we had to dine at Manna and they were right!
Taormina-
Ristorante Nettuno- excellent seafood in heart of Taormina.
Ristorante Nero d’Avola- down off of a side street, indoor and outdoor dining. Excellent linguine alla Vongole, lamb chops. The mussels were not good.
While in Cefalu don’t leave town until after you’ve eaten a cannoli.
Restaurants are all personal taste. I can say I didn’t have a bad meal on the entire Sicily trip. While walking around, look at restaurant menus as you pass them to see what looks good to you.
