Will we have a problem getting from Adrano to Syracuse the day after Easter using train or bus?
The only way to know is to check the schedules for that date, but I don't believe they're out that early (I may be wrong though).

I can't vouch for this online schedule, but it's the current one, and it shows one bus a day between Adrano and Catania on holidays (festivi). So if you're hoping to make the trip in the mid- to late-afternoon, you may be OK. There's plenty of transportation (bus and train) between Catania and Siracusa, and certainly some of it will be running on Sunday.
This would concern me--planning to take the only bus of the day on a holiday, and fairly late in the day at that. If you travel to Adrano via Catania initially, I hope you'll have time to inquire at the Catania bus station about the status of the return bus on Easter. It's always best to try to get local confirmation.
The distance from Adrano to Catania is about 22 miles. You wouldn't blow your entire budget if you had to take a taxi. You really should be prepared to do that, just in case.
I've never traveled in Italy/Sicily over Easter, but I imagine a lot of people are on the move. It would probably be a good idea to buy your transportation tickets before the day of departure if that is possible.

Sorry that I mis-read the original post, but be sure that Easter Monday is not itself considered a holiday.
And it might be subject to unusually heavy traveler volume either way.
Yes, Easter Monday is a major holiday in Sicily so you may have problems (again, you have to check the schedule). If nothing else works, just rent a car.
Easter Monday is a holiday, therefore buses will be operating on the Sunday/Holiday schedule, which is usually zero to 2 buses a day, in most places.
If you plan a day trip from Adrano to Siracusa on that day, you should rent a car or be ready to take a taxi from/to Catania, which isn't going to be cheap.
