Has anyone flown from Rome to Palermo? If you've been to Sicily this year on the tour, what restaurants would you recommend on nights when dinner is not offered?

We had "interesting" flights within Italy
ROME TO PALERMO
Our flight from Rome to Palermo got pushed up 2 hours by Alitalia ... which would have given us 45 minutes, rather than 3 hours, to connect from an international flight from SFO.
It was also the day before Alitalia stopped flying.
So my suggestion - if you have a tight connection, consider flying out the next day, or at least book both flights with the same ticket. I'd booked the flights separately so had no recourse for the change (mostly an inconvenience and extra cost)
We ended up booking a flight the next day, and spending the evening here, about 20 Euro taxi from Airport, less expensive shuttle return

Catania - Turin
We'd booked fly-by-night airlines ... and I completely missed the flight email which changed the flight from 6 am to 10 pm the night before. We pivoted and booked a flight to Milan instead.
PALERMO RESTAURANT
In Palermo, we had a lovely dinner here on a pedestrian street.
It's also near the TIM store where we got a tourist SIM Card - TIM set us up in minutes, 2 Wind Tre stores couldn't set us up after 20-30 minutes each
