Short June trip starting in Perugia

I will be attending a wedding in Perugia in June with my wife and am trying to plan the rest of my trip around it. We can only stay about a week in Italy, so ideally we wouldn't spend too much time traveling as our time is already limited. However, I am open to a day of travel if it makes sense for the destination. We have to start in Perugia because we can't go a week earlier and end in Perugia.

We have already been to Rome, Florence, Cinque Terre, and Venice, so we would like to visit a different area. Tuscany is close, but we have spent quite a bit of time in Napa, so visiting vineyards is not as special. I was considering the Amalfi Coast, but I don't know if it is too similar to Cinque Terre and we would be better off visiting somewhere else. I have also read that AC can be incredibly busy in the summer.

My wife and I love the outdoors and beautiful scenery as well as exploring new towns. We also enjoy churches, architecture, and good food.

Thank you for any advice you can offer!

Where are you flying in and out? Umbria is gorgeous, sounds right up your alley--why not spend all of the week there? I would definitely not waste time going to a different region.
How are you getting around? If you can fly out of Ancona, you could zip over to Marche.

I intended to fly through Rome both ways, but have not yet booked a flight so I am open.

I had considered staying in Umbria the entire time, but wasn't sure if we would be better served splitting the trip between two regions. I also don't know when we will be able to return to Italy, so I would like to see as much variety as possible. I always struggle to balance fully exploring a region vs. seeing as many different regions as possible.

I have been to Tuscany three times and never visited a vineyard, so I think anything you might want to do could be found--particularly outdoorsy things.
With a week, I think a day spent moving much further afield will be a day wasted--there is so much great stuff packed in Italy you cannot really go wrong. We need to know if you will drive or stick to trains and bus.
I would read up on Umbria, Tuscany, and Lazio. I am assuming at least two nights are devoted to the wedding logistics, so up to five nights with the last night near Rome airport means choose one place.
