We are planning to drive from Kastelruth over Sella pass tomorrow. Are there any tips on places to stop besides the top of the pass? Enjoyable towns or a good restaurant recommendation? I’m particularly interested in wood carving.

The owner of Agriturismo Drockerhof in Bulla is a good carpenter and wood carving artist. Email them to see what's available.
I also saw many wood carving shops in Ortisei. Beware that some items are definitely not locally made.
