I heard from someone that many of the shops in Naples do not open until later in the day on Mondays - like 4:00 or later. Can anyone tell me if this is correct? Thanks for your help.

I don't know if they do or not but some folks get confused by the fact that many shops in Italy close from about 1pm and don't reopen until about 4.30 to 5.00 pm. I once saw a post on another site from someone who visited Sorrento for a couple of hours one early afternoon in September and reported that the town closes down for winter in September! If it is half day closing on Mondays in Naples opening time would be late afternoon.
