Several Questions about Touring in Veneto

My wife and I will be traveling in Italy in May. We are taking a cruise to Greek Isles out of Venice for a week. Plan is to go to Verona the day we disembark (we have visited Venice before) by train. Do we need to have Reservations for the train from Venice to Verona or can we buy tickets at the station the day we wish to travel?

We plan to use Verona as a base to sightsee in Veneto for about 5 days. We would like to do a day trip to Lake Garda. Is this best done by train, bus, or should we rent a car for a day? Can we rent a car for a day in Verona? Would we have to reserve a car ahead of time?

Lastly, we would like to tour wineries in the area. Can this be done? Are there tours that can be booked to do this once we are there or is it best to book ahead? Any recommendations about tour operators?

You can buy train tickets on the spot. But if you want discounts you need to purchase ahead. However no refund if you miss the train with a discounted ticket.
No train to Lake Garda, except Desenzano or Peschiera on the southern shore. The best way from Verona is by car or bus. North lake side is the most beautiful. But Sirmione on the south is a pretty and quaint (albeit overrun by tourists) town.
If you rent a car, you should reserve ahead. If you keep the car overnight make sure your hotel in Verona is located outside the ZTL (restricted traffic zone), which encompasses a good portion inside the city walls, or at least inquire about parking before booking.
A rental car is best for the wine area. The closest wine area is the Valpolicella, just north of Verona. A little farther west of lake Garda is the Franciacorta, famous for their sparkling (better than French champagne, and just as pricey).
If you have several days you could also split your days by staying half time in VR and half at the lake. Two nights at the lake would be the bomb. Visit Malcesine, Limone and Riva in the North. Lake. All connected by bus or boat.
