I've been using San Marzano tomatoes, canned (DOP), for years. I know generally that they are farmed in the volcanic soil in the Valle de Sarno, just east of Vesuvius. I've visited bufala mozzarella farms, wheat farms and salt farms. So I need two more farm visits to complete The Pizza Ingredients Challenge: a yeast farm (herds of little yeasts roaming the range trailed by yeast wranglers); and, a San Marzano tomato farm. Next trip to Naples, I want to complete the tomato part. I suppose that I could just drive around the Valley during harvest season and hope to find a field or a farm stand. Do people buy the tomatoes from road side stands and, if they do, is there an area where those stands are easy to find? I'd be surprised to learn that there are processing plants open to the public, but do you know of any plants in the area? Thanks
