San Gimignano--If at all possible, go later in the afternoon after all the tourist buses have left.
Florence--Tuesday or Wednesday would be good.
While you're in the area--Siena is best seen at night.

Bill, in San Gimignano, while the Main Street up from the gate to Piazza Della Cisterna is a beautiful area, it is certainly very commercial and touristy. Continue above and off to the sides of those areas, and you will find that the town is much quieter, with views of the town's towers, skyline and nearby countryside. I expect there are still two wonderful "dueling" gelaterias on the main piazza, come with an appetite for both, and then you can decide which is really "the best in Italy and the world"!
