Looking for a taxi service that will take 2 people from Siena to Montepulciano, roundtrip for 1 day, June 18th. The sites I have found are already booked up for that day. Can you find a taxi at the train station the day of or does this need to be booked in advance?

You could take the train
Then taxi or bus into the center
Expecting a round trip taxi to sit all day while you visit the town is not realistic and would also be super expensive
I would guess a one way taxi would be about 150 euros
And again that taxi has to drive an empty car back to Siena so you’ll be expected to pay for that

Okay, you made a good point. I went ahead and booked a train for the excursion.

Just FYI
That is a a regional train that can never sell out and price never changes so no need to book in advance
