We were going to "wing it" as far as rooms so we could do a flex trip..is this advisable? We have one room booked in Venice on 8/28, then nothing. We plan 2 days Venice, 3 days lake district, 3-4 Cinque terra, 3 days- San Ginagiamo

When we traveled in Italy in September I made reservations in advance. Do you only have one night reserved in Venice but plan to stay 2? Where in the 'lake district'? The Cinque Terre will still be quite busy in early September. You can always take your chances in these small towns, but know that the best and/or most economical places will already be booked. If you don't care where you stay or how much you pay then you should be okay.
yes, we only booked one night in Venice so we would have something upon arrival. We plan on staying 2. Then doing a day trip in Verona and staying in lake como, not sure where...any recommendations? We are then headed to Vernazza, then Tuscany, back to venice. We are on a budget, so I guess booking in advance is the way to go. out first room we booked through Airbnb in venice for only $62, outside Venice a little. We want to stay under $125 if possible
Venice is expensive. Is there some reason you don't want to stay in the same place both nights? Vernazza isn't very big and I don't believe there are any hotels per say. I booked the place we stayed in Vernazza one September in March. I would try to find something there now. Monterosso is larger and will have more options for you if you can't find anything in Vernazza. In Varenna (Lake Como) we stayed at the Orange House. It is very nice and economical. The owners are very sweet. Are you planning to stop in at Verona on your way from Venice to Lake Como? There is a place to leave your luggage at the train station.
It is advisable to reserve rooms on weekends (Fri and Sat nights) for some vacation hot spots, such as Venice, Cinque Terre. Although September is already on the tail end of summer and rooms should be available in most places. I have no idea what you mean by Lake district, but if you intend Lake Garda, that is a good choice and relatively close to Venice. Lake Como is quite a detour from your intended itinerary. I don't know how you are going to kill your time in San Gimignano for 3 nights, I hope you have a car to go around.
