Is the Rome Zoo a safe and easy place for a grandma to take a 2 1/2 year old?
I plan to take a taxi with her and the stroller from near the Colloseum, while her parents go on a tour.
Any other suggestions?

Yes, it's extremely safe, as is all of Rome in general. You will be in a well-trafficked and touristed area within the Villa Borghese Gardens, in (I assume) broad daylight. No need to worry.

Thank you! Will it be easy to get a taxi there with a child’s car seat to leave?

You should probably order a taxi from an app and specify that you need a child's car seat if you don't have your own.

Are you bringing your own car seat? You won't have a problem finding a taxi near the Colosseum, but I'm not sure about storing the seat as I've never taken young kids to Rome. Maybe someone with more expertise can advise or the zoo's website might have info about storing personal items.
