The choices are overwhelming!
We will be in Rome for 6 ngts. We'll take the Leonardo Express to our accom near Termini. We plan to head to the Vatican one day, and do the Colosseum one day. We'd also like to see Spanish Steps, Trevi Fountain - but mostly meander. I note there is "tap & go" with a phone - we probably won't have access to data other than in our hotel or public spaces so that may not be an option. I would imagine one can purchase paper tickets from a tobacconist or convenience store? And, is it worthwhile to buy some type of pass based on our plan?

You can use a tap enabled credit card on buses, trams and Metro in Rome.
For what you plan to do, a pass probably isn't worthwhile.
The risk of pickpockets on mass transit in Rome may not be any higher than when navigating through the mob at the Trevi Fountain and other popular sites. You should take the usual reasonable precautions in any high traffic area.
