Rome to Sorrento to Avellino

My family and I will be traveling on our first trip to Italy mid June 2020 through Rome. Age ranges vary from my 5 and 8 year old kids to my 70 year old mother in law (8-10 people total). We are starting in Rome (3 nights) going to Sorrento (4-5 nights) and heading to Avellino Campagnia region (2-3 nights) before making our way back to Rome. I am having a hard time thinking of when is the best time to get the rental cars. We have some plans to visit touristy places (Capri/Positano) and plan to use the ferry for these but like the freedom of the car to explore off the beaten path places.

Should we take a high speed train from Rome to Naples or Salerno to pick up the rental car?
Or train to Naples, ferry to Sorrento and then get the rental car?

I am trying to think of the easiest way with people, luggage, and a car seat.

The only place you might need a car is after you reach Avellino. Attempting to drive the Coast this time of year is an exercise in futility. You'll just end up sitting in traffic behind a bus.
You could rent your cars in Sorrento as you leave for Avellino. Several agencies on Corso Italia. We book thru autoeurope.com.

Use Trenitalia.com for purchasing tickets. Use Roma Termini, Napoli Centrale and Avellino.
There's a schedule change the first week in June, but the fast trains can be purchased online around 90-120 days from travel to get the inexpensive super economy tickets.

Consider arriving Naples and taking the ferry directly to Capri, spending the night. Then ferry to Sorrento mid afternoon the next day.

If you do rent cars, make sure each driver has an IDP available at AAA for $25.
