There is a train scheduled every 30 minutes from the airport to Termini.

If you take the train from the airport to the Roma termini station, you can catch trains from within Roma termini (we took Eurostar- 1 1/2 hr ride) to Naples, then change to Circumvesuviana train (follow signs inside Napoli Centrale to find Circumvesuviana trains) from Naploli to Sorrento.
We found train schedules from Roma Termini to Naples online (see guidebook updates for website), then bought our tickets at Roma Termini. A nice Australian couple gave us their unused Circumvesuviana tickets for the remaining leg of trip.
