Rome: suggestions for evenings

Hi,
We are in Rome for two full days. Staying in an Airbnb in the Gianicolo area.
I managed to get 8 am tickets for the Vatican museums for Day 1. Plan is to finish the museums by noon, grab some lunch and then queue up for St. Peters Basilica. Hopefully we shud be done by 5-6pm. Not planning on climbing up the dome. What can we do after this in the evening? Obviously we will be tired so looking for suggestions for something that is not very tiring and involves standing in a line.
Day2 is marked up for Colosseum, Forum and Pantheon with a lunch break in between. Evening plan is to do RS heart of Rome walk/stroll. Need suggestions for a nice (not expensive) dinner place to celebrate our daughters birthday. She is a young adult.
Looking forward for some recommendations.

I would just start wandering! And definitely get gelato :)

I found a Rick Steves' book in our airbnb in 2019 (because I was the dolt that left it in the US when I left my house, made a very clueless visit to Verona! haha) and we ate at three places from his book, Trattoria der Pallaro (where its 25 euro and you eat multiple courses with whatever they bring you, on a tiny square just south of the Corso Vittorio Emanuele), La Carbonara (a restaurant on Camp dei Fiori, one he says is actually good despite being on a square), and Trattoria da Lucia, in Trastevere (where I learned the magic of the pasta alla gricia dish! wooooo!!). From what I can gather from google maps, Gianicolo is near Trastevere? I would make a reservation for the birthday night by popping by earlier in the day or the night before, but unless you're doing Michelin starred dining, I feel like most restaurants are going to be the same type of formality, just "nice". Trastevere is definitely a place where the nightlife is all around, I would say that would be the place for a celebration.

Hosteria Del Pietro 2 blocks down from Piazza del Poppolo is a great place to eat inside or out.
Great food and service. Good luck.
