We will need quick lunches near vatican and coloseum. Any suggestions? Also places to buy snacks and fruit.
The Vatican area is tough as there are so many bad places. It is best to get a little bit away from the area immediately surrounding it. I always liked Osteria Delle Commari a couple of blocks from the museum. There is an Alice Pizza on Via delle Grazie not too far from Piazza San Pietro. They have great pizza and many locations now have seating.
Near the Colosseo, avoid restaurants with a view of it. They are terrible. I like Taverna dei Fori Imperiali, a few blocks away, and Pizza Alle Carrette is pretty good. Patronized by lots of locals.
Luckily you will see lots of stands selling fruit, and lots of little markets with fruit on offer. You will not have trouble finding that.
Restaurant Arlu on Borgo Pio, near the Vatican. There's also a McDonald's nearby that people on this Forum say has good espresso & Italian food; I dunno, but it'd be quick & familiar, at least... We walked on by.

Certainly some days you need to be quick about it, but a leisurely lunch of an hour-or-so can be very rejuvenating. A chance to sit, maybe in A/C if it is hot, to reflect on the morning and review plans for the afternoon, to enjoy each other’s company. Be Italian! Italians never eat at their desks but always enjoy the company of friends and family. It’s nice. Try it at least a few days on your vacation.
