Does anyone know of any reasonably priced hotels with good AC in Rome's city center, preferably within walking distance of the Pantheon? Any good restaurant recommendations nearby? We only have 2 nights and would like to make the most of our time. All advice welcome!

try the RS book; he recommends several hotels. BTW so you're not surprised, at many hotels in Europe the AC only runs when your room key is inserted in a slot.
Try Maison dell'Orologio, a B&B near Piazza Navona that is walkable to the Panetheon plus the Vatican in the other direction. A number of restaurants in the alleys near by plus around Piazza Navona.

There are 3 of us and unfortunately this hotel has no triple occupancy.

Since there are three of you, have you considered renting an appartment? Many are reasonably priced when split three ways, though you need to check if they will accommodate you for only two nights.

We recently stayed at the Hotel Nerva-right across and I mean right across from the Imperial Forum. Great location, clean and friendly helpful staff. Rick receommends it and I suggest you look at Trip advisor reviews to get a good picture of the hotel
