My husband and I were thinking of doing a last minute trip this year, leaving USA on Dec 25th and arriving in Rome for a few days, then traveling to Florence for the last part of the week and leaving on Jan 1st. I understand that the country basically closes down for Christmas, but will enough restaurants and sites be open from 26th to the 31st to make the trip worth it?! We are looking for a relaxing week, so big tour groups aren't needed. Looking for help! Thanks!

New Year's Eve in Florence is an awesome experience. And everything should be open except for Xmas and New Year's day - I say go for it.
December 26th is a holiday in Italy. St. Stephen's Day. Many places might be closed. Spect Christmas 2010 in Italy. Very magical. I say go for it!!
I booked a trip this summer for Florence over that same week. After the fact, I became concerned about things being open. I am going the 26-2. I hope there will be enough to do on the 1st!
"Enough to do" can be a great walk in Rome. You don't need a museum to be entertained: The whole city is a museum! We'll be there for 9 days over Christmas. Christmas Day I plan a walk in the Ghetto and a visit to the Presepi Museum at the Church of Santi Quirico e Giulitta which is open, plus a fabulous meal. I believe the Foro Romano, Palatino and Colosseo are open Dec 26. Many churches will be too.
