I am working on booking airfare out of Rome (FCO) on Sunday, May 5 as our RS 10 day tour of Italy ends that day from Hotel Quirinale. How early should we get to the airport? Would we need to leave the hotel before 7 am for a 10:30 flight? This is my first trip to Europe so I am pretty green on the planning. Thank you.

Have your hotel obtain a car and driver to take you to the airport. They will know what time you need to live with the ground traffic that day. It's really not that far out to FCO from the city.
You could take the Leonardo Express from Rome Termini, and it's quick and efficient. But getting to Termini with luggage is not an easy deal unless you're staying close by. Curbside delivery is really preferred.

Your hotel is a short walk from Termini where you could take the Leonardo Express to FCO. The train takes about a half hour so you’d have to leave the hotel about 15-20 minutes before departure to get tickets and board. You might also find out that some of your tour buddies would split the cost of a taxi which would be the easiest way to get to the airport.

Where are you flying to? How long does the airline say you should be at the airport before departure?
If it is an intra-Schengen flight, 90-120 minutes before should be enough. If it is intercontinental, 3 hours at least.

At 10.30 in the AM it is most likely a connecting flight to somewhere else in Europe. But we need to know if connecting or direct flight to the US.

I will be flying back to Minneapolis and will have at least one connection. Not sure if I should book one in Europe or first connect in the U.S. Thanks for the good information. I suspect that I best be to the airport at least three hours in advance.

Your RS tour guide traditionally helps organize transportation to the airport for departing tour members. They usually arrange taxis or vans shared by tour members who have flights departing around the same time, and they'll plan to have you at the airport in time to comfortably check-in and get to your gate. For a 10:30 flight, I'd say the absolute latest you'll want to arrive at the airport is 8:00, so you'd probably depart the hotel around 7:00 or a bit earlier.
