We will be picking up a car at Fiumicino airport driving up to Montepulciano. We would like to stop at the Parco degli acquedotti for a few hours. Does anyone know what parking is like there, it doesn't look far off the main highway, so we had hoped to drive in.

If you're referring to the Aqueduct Park in Rome, it's just off the Appian Way on the opposite side of Rome from the FCO Airport. You'd have to drive around the GRA and then into the Eastern side of town. It's adjacent to a park and apartment buildings so there is parking; usually pay-by-the-hour. It would not be on the way to Montepulciano. See the link above for maps, pictures, and more information.
