I will be in Rome on Easter weekend and was going to get a Roma Pass. However, I noticed that on their website, that weekend is grayed out, denoting unavailability. Does anyone have any information on whether you can still use the pass Easter weekend if you buy it ahead of time?

It looks like they may be offering a new card as the site says the validity of the pass is only until March 31rst. Just wait and buy the pass once you get to Italy. There is no benefit to buying it online. Then you are penned down to picking it up at a specific location and if they are out you must jump through hoops to get it somewhere else.
As for your question, yes, you can still use it during Easter week.
