Can someone verify that when the Itinerary states that we will be taking a stroll through the historic heart of the city (Rome) and it mentions several attractions including the Pantheon; do we enter the Pantheon or just walk past???

The "Heart of Rome Walk" only walks past the Pantheon. There is a separate audio tour for the inside, the "Pantheon Tour" does a good job. There are many other tours that you can use in Rome, as well as the rest of Italy. All you need to do is download the app and look through the tours, then download the ones you want to use on your trip. It worked great for us in June.

The Pantheon is free and close to the hotel used for the tour. I've been listening to the walking tours for Italy prior to my trip and they do seem excellent

When you say "the itinerary", are you talking about an itinerary as part of a RS tour group? Or are you talking about the free audio tours you can download online?
