In Florence:Garga & Bacchus,both pricey.Trattoria Tito,local,a few tourists.

I enjoy the Trattoria Za Za in Florence. I LOVE the gorgonzola pizza at Cafe Etrusca in Fiesole (about a 20 minute ride from the station on bus #7).
On our trip to Rome last November we decided to try a RS recommendation near the Spanish Steps. It was Il Gabriello and we had a great meal. The staff there--I think two brothers run it--one is the chef and the other manager-- are very friendly will serve you an excellent meal. They grow most of their own produce.
In Florence I really enjoyed the lunch I had at Trattoria Za-Za. The ravioli with truffle sauce was AMAZING. Also, I had some appetizer that was great, it had a million different little things that you got to try (including an omelette with truffle sauce). Za-Za's is on this square right off the San Lorenzo market, and it was nice to sit outside on a sunny day and people watch while eating. Also, I Fratterni, the little sandwich shop in Rick's book was really fun. You just sit right on the sidewalk with your sandwich and wine. It was a unique experience. And ALL the gelato places! Have fun!

My husband and I really enjoyed El Jino. Its a terrific little restaurant that is filled with the locals and the price is great. If you can find the Savoy Hotel, (its in the piazza where the merry-go-round is) go straight down the street on the right hand side if your facing the hotel(you'll pass a gelato store). When you see Elizabetta Street or an arrow going towards the Piazza, go left (there is a shoe store on the corner). You should see the sign for it. I highly suggest you try it! Also, the Open View Bar on the Arno river is very good too!

I was in Florence last week. Try out Trattoria Marione. Really good food there. I actually went there 3x during my 3.5 day stay.
