My traveling partner and I really enjoyed dining at Trattoria del Tribunale, Vicolo Politi 5. Wonderful local dishes. Try a flight of differently aged parmigiano Reggiano.
We enjoyed Trattoria Corrieri Parma. We first went there 20 years ago. When we revisited there a few years ago, we were not disappointed.
You should definitely try Ristorante Cocchi. It's located in the Hotel Daniel, but is open to everyone.

We had a nice lunch this spring at Ristorante La Greppia Parma which features local typical dishes. Moderate pricing, pleasant dining room, and we liked all our selections. Memorable for me was an appetizer Bastone of Tosone (a cheese similar to parmigiano) wrapped with smoked pancetta. Located an easy walk from the Duomo and the Pilotta Museum Complex.

About restaurants there is even the very traditional one I Corrieri.
And in Parma one of the best ice cream of Italy: Ciacco.
BTW: tosone is if fact part of the wheel of Parmigiano-Reggiano. When the fresh cheese is put in the mold often there are some irregular corners that need to be trimmed. The cut is called "tosone", from the Italian word "tosare" (the same word used for wool cut).
That irregular long stripe of young Parmigiano is not wasted but sold at few euros as an independent cheese.

We had a wonderful tour with Daniela Lanfredi (https://www.danielalanfredi.com). She's a local and does provide food tours, but since it was our first time visiting Parma, she suggested we do a walking tour instead. We were very happy we went with her suggestion and learned that Parma offers much more then cheese and ham. At the end of the tour, she did arrange for us to sample the variety of cheeses and meats. She also pointed out "Ciacco" for ice cream and told us about the history of the shop. Highly recommend.
