I have not been to Palermo over Christmas but if it is anything like Rome, yes, reservations are imperative as many Italians dine out for Christmas Eve and Christmas Day lunch as well. Perhaps start by asking your hotel.
I Googled “Christmas in Palermo” and there looked to be a lot of useful links you could explore.
