Restaurant/Activity Idea/Feedback- Venice, Garda, CT, Montepulciano, Florence

We have finalized the itinerary and lodging portion of our honeymoon next May, so it's on to planning some of the details. Here's what we have so far:

Day 1: Fly into Venice, staying at Ca Centopietre in the Dorsoduro area
Day 2- Venice: just planning to explore, get lost, and take a gondola ride
Day 3: Renting a car, driving (potentially with a stop in Verona) to Malcesine on Lake Garda, where are are staying at the Beach Hotel du Lac for three nights
Day 4- Lake Garda: Monte Baldo hike/cable car, perhaps renting bikes
Day 5- Lake Garda: Boat rental?
Day 6: Leave Garda to head to Cinque Terre for three nights, where we are staying at an Airbnb in Monterosso. We'd like to stop somewhere along the way to break up the drive, but not sure where yet....
Day 7- CT: Hiking!
Day 8- CT: Angelo's Boat Tour
Day 9: Leave CT, heading to Montepulciano for three nights. Stopping in Pisa along the way to recreate a childhood photo for my future mother-in-law. Staying at the Hotel Panoramic
Day 10- MP: Tuscany Vespa Tour
Day 11- MP: Visiting a thermal bath- but which one?
Day 12: Leaving Montepulciano, returning the car in Florence. Staying at the Palazzo Gaudagni four nights.
Day 13-15: We'll have the Firenze card and hope to visit a number of the museums, as well as exploring
Day 16: Heading home

We are very active and love to explore, so while this trip may be busier than some would like, we think it will suit our style of traveling (even on a honeymoon!). We love any suggestions for must-sees, -dos, or -eats. We have budgeted about $150/day for both of us for meals, and have a separate budget for the activities we're planning (so far, about $1K). We'd love to splurge on one fantastic meal in each location, and the rest of the time we're happy to check out local haunts and treasures. Thanks for your thoughts!

Day 4 or 5: visit by car or boat the villages of Limone and Riva del Garda, both a short distance from Malcesine. Torbole is also very nice.
Day 6: It's a 5 hour drive. The shortest route to get there is on the freeways via Mantua and via Parma. Both merit a visit, although your time is very short.
Day 11: Montepulciano has thermal baths and so does Bagno Vignoni, nearby. There are lots of choices in Tuscany though. While in Montepulciano don't miss a visit to Pienza. There are lots of potential trips you could take from there by car (Pienza, Siena, Montalcino, Monteriggioni, Cortona, Assisi, Castiglion del Lago, Buonconvento, etc.). You could spend a lifetime in Tuscany and not run out of things to do.
