I ended up eating in other parts of the city (near my sightseeing targets) most of the time, but there are two places I can recommend:
Saaz, Via Cavour 162. It's Indian, so probably suitable only if you're in Rome long enough to need a change from Italian food.
Gelateria S. M. Maggiore, Via Cavour 93a, in the angle where Via Cavour and Via Panisperna intersect. Good gelato, but not a really wide selection.
There are quite a lot of restaurants in Monti, especially on Via Urbana, Via Madonna dei Monti and Via Panisperna, and those are nice streets for strolling. I made note of interesting-looking places and checked their ratings on Google. Then I ended up going back to Saaz several times on the nights I wanted to eat near my hotel, so I'm not of much help.

Hi Amycnr -- You might want to take a look at Elizabeth Minchilli's recommendations. She is a well-known, Rome-based blogger, writer and food tour provider who happens to live in the neighborhood of Monti. I too, will be staying in Monti and am planning to use some of her recommendations. I've already booked one of her suggestions, "Taverna dei Fori Imperiali" . I had an excellent meal at Taverna dei Foro Imperiali when I was in Rome last year. I showed up right at opening time at lunch and it's a good thing I did because it became packed very quickly. Also, not too far away is Ai Tre Scalini which is also excellent (I believe it is mentioned in the RS Guide).
