Hello- After reading a few of the posts, I have looked a the tour co's suggested in this forum: Dark Rome, Viator and Walks of Italy. They all seem to have about the same prices. I wanted to know which company was better, what currency should I pay and what would be the gratuity for a party of 5. If I missed any other tour co. please advise.

Viator is a reseller- I try to find/book with the actual company.
We've done 3 tours with Walks of Italy and thought they were all fabulous
Pristine Sistine- worth every penny, Colosseum and the Catacombs and Crypts tour.
You will pay in euros online- your credit card will make the conversion.
For a full day tour or cost in 70-100 euro range we usually tip 5-10 euros per person. Tips are actually not expected but usually appreciated. IIRC our WOI guides didn't accept a tip.

Another tour company that does great food walking tours is Eating Europe. Use EATWELL 10 for a 10% discount.

Here's another vote for Walks of Italy. We did 3 WOI tours - 2 in Florence and 1 in Rome. Our guides were very knowledgeable and helpful.
I didn't realize how good they were until we did a Viking River Cruise on the Rhine 6 months later. WOI made the VRC guides look like bumbling amateurs.

Euros. If you are paying anything else, you are dealing with a reseller, which in this situation is not necessary; you can book direct with the tour company.

I don’t know if once I am ready to check out if I would have the option to change to Euros...
