Recommendations what to see in Puglia in September

This September, we are staying four nights in Noci in the Puglia region in southern Italy. We will have a rental car and our GPS. Does anyone have any recommendations as what to visit, where to dine, and special sites to see? We like to visit wineries, archeological sites, and do some shopping. Is parking an issue in the local towns/villages? Also, I'm assuming that the dress code is very casual??

Quite a few of the towns have ztl's; however, it was easy for us to find parking outside the prohibited zones. There is a Roman site south of Polignano with its own museum that we thought was very good.

Puglia is definitely underrated, and as such, won't be as touristy as other areas of Italy. Alberobello (trulli buildings), Ostuni, and Lecce are all worth a visit. Il Poeta Contadino in Alberobello is highly recommended for dinner. You won't find many wineries, as table grapes are mostly grown/ harvested.

Very casual will do in most places, but when visiting churches, you should have shoulders and knees covered.
