Several years ago, we stayed at Locanda Ilune, a small agriturismo in southern Tuscany. The property is lovely and serene. The owners are delightful, kind, helpful people.
The ample breakfast includes fresh ricotta, made on the premises. They also offer dinner some nights. We partook one night, and the multi-course meal was just wonderful.
Saturnia, a spa town, is a few minutes’ drive away. The area has many other interesting attractions, as well. Our stay there is one of my fondest memories from many trips to Italy.

Saturnia is nice, but not conveniently located on the route Florence-Rome. That area of Maremma requires driving through some curvy highways to get there. Still it would be a top choice for hot springs.

Terme di Petriolo, along the Siena-Grosseto highway is also easily accessible.

Chianciano Terme, Bagni San Filippo, Bagno Vignoni are closer to the A1 freeway Rome-Florence.

All of the above have free natural hot springs (as well Spa Resorts), except for Chianciano, where there are only Hotel Spa resorts.

We just returned from Italy. We rented a car to explore Tuscany for a few days and wanted to check out the thermal spas (edited to say "springs" not a spa) at Bagni San Filippo. Although it was midday and cloudy with a threat of rain, it was overcrowded. We parked on the street outside of town and paid for parking. We walked quite a ways in to find the "white whale" and each pool was filled with people. We kept walking to almost the end. There were wire fences to keep people from walking in certain areas (we think), and unfortunately, garbage throughout. The pools at the end were lukewarm but we were happy to experience it. We didn't stay long as people were waiting for a turn. A few people mentioned that "the pools we chose weren't clean because they were at the end." We tried not to read into that too much! Perhaps if you go first thing in the morning, it would be much better.
