We are thinking of going to see Ravena’s mosaics on a Sunday or Monday. Sat is our only other option. Any reason to go on particular day? Any closings? Thanks!

If you have time, also visit St Appolinare in Classe, in the countryside a few kilometers outside of Ravenna https://info.ravennantica.it/selection/timeslotpass?productId=10228213489700>mStepTracking=true. To me, it was the most impressive of all.
If you're daytripping to Ravenna, you won't have time for much more than the seven key mosaic sites (that's including St. Apollinaire in Classe), a brief look at the historic center and lunch, so I don't think it will really matter that some of the city's points of interest are closed on Sunday and/or Monday.
My notes for my September 2022 trip to Ravenna indicate these closures (which of course may have changed in the meantime, or may vary by month):
- Museo d'Arte della Citta (sometimes exhibits contemporary mosaics) - closed Sun and Mon.
- Cripta Rasponi - closed Mon.
- Museo Dante - closed Mon. (I haven't seen this.)
- Museo Nazionale - closed Mon and some Sun.
