There are 4 of us leaving Rome and going to Orvieto. We will be in Orvieto for 3 days and then continuing on to Florence. After 3 days, we will be returning to Rome. Our questions for everyone are: Do we purchase point to point rail tickets or can we purchase a round trip ticket?
Should we purchase them now before we leave? 1st class or 2nd class? thanks to everyone for your help.

You can wait and purchase them when you get there. I was just there in May and did that to all 6 cities we went to. The trains go so frequently it's very easy. What we did sometimes was look at the train schedules or even buy the tickets the day before.
It's much easier to just do it point to point. Most main train stations will have automated ticket kiosks for you to purchase from. Otherwise there is always a ticket counter you can go to as well.

The trip from Rome to Orvieto will most likely be on a Regionale or Inter-City train. These are the slower locals. Most high-speeds on the same tracks are non-stops whizzing through to Florence. Its rare for a Eurostar to stop at Orvieto going north. There are no seat reservations permitted on the Regionale-class train. You have the option to pay about 3Euro to make them on the Inter-City train. The tickets for these trains are open tickets. They are good for 60 days and have no train number or time on them. You can hop on any train making that run during the 60 days. The fare from Rome to Orvieto is 7.10Euro for the Regionale and 13Euro for the IC train. The only place you can buy these tickets in advance is at RailEurope. They charge $24.
You can indeed purchase your Rome/Orvieto, Orvieto/Florence and your Florence/Rome tickets at the same time. You wil receive one different ticket for each train you are on. Note that your return journey could be on a non-stop Eurostar. This train will require you to know the date and time that you want to travel. Either the agent or the ticket machine will assign the seats as part of the ticket purchase. Also note that the fare for the ES run will be 39.90Euro. Quite a jump to ride the high-speeds.
You can easily buy the tickets there. Trains to Orvieto run about one an hour. For the ES train from Florence to Rome, there are 53 trains a day. You will find that 2nd class is just fine. You get a bit more arm and leg room in 1st class but that's it. Try it once and see.
