If I purchase a sim card in Italy will it recognize English search requests via SIRI or Google Now? My phone is unlocked and GSM capable.

Yes everything will remain the same.
The only things that will be in Italian are the initial set up and the texts your wil receive from the cell company, about your usage etc. I used TIM and they set it all up for me since i did not understand.
Make sure to bring your passeport.
