Sometimes the scrapbooks will show the specific hotels.
In general, the hotels on RS tours are in great locations but they are not high-end hotels.
I've been on a lot of Rick Steve's tours. The hotels can vary from good to great, and I really appreciate that they are located in the centers of towns.

I've been on several Rick tours, many of them in Italy. They tend to be simple, not all have elevator, usually offer a good breakfast and are centrally located. I would go to the website of Hotel Aberdeen in Rome to see an example. I've stayed here on tours and on my own. I agree taking a look at the scrapbooks will give you a good idea. I've noticed an improvement in the hotels used in the last few years.
After having been on 12 RS tours, 4 of those tours in Italy, my experience has been that the hotels in Italy have always been clean, generally family run and close to the center of town (in Rome we were in the Trastevere, another time close to the Fountain of Moses) some of the hotels have been amazing, some not so. On different tours than the one you specify, we have stayed in Florence, Venice and Rome. You might want to specify what your expectations are in a hotel for any of us to answer whether the hotels we’ve stayed in meet your expectations or not.

Our guidebook research gives us an edge in discovering the charming, centrally located, often family-run hotels that promise to be a memorable part of your travel experience. Often quaint (sometimes creaky), and full of personality, they're run by Europeans who are also our friends.
Be prepared for stairs — hundreds of them. Many of our hotels don't have elevators…one more reason to pack light and be in good shape. Private bathrooms are the norm, but on a couple of tours a small chance exists that for one or two nights your bathroom may be down the hall (only if you see it listed under your tour's physical demands).
Dont expect luxury hotels, but dont be surprised of some are nicer than you think. The primary criteria for RS tours is location - close to the sights you will visit or public transportation. You wont be transported by bus to sights daily while in a city, so location is critical.
We took this tour >12 years ago and were happy with the hotels. Yes, they all had private bathrooms, and good breakfasts.
I've been on 5 RST Italy tours including VFR. We stayed at Hotel Mercurio on Calle del Fruttariol in Venice, Hotel Accademia on Via Faenza in Florence and Il Granaio di Santa Prassede on Via di Santa Prassede in Rome. I don't think any had an elevator, each were full of charm and while bathrooms quite snug with sub telephone booth-sized showers and lots of stairs, all were clean and comfortable with responsive staff. Be sure to check out tour reviews for info on what alums thought about their experience.
