Puglia restaurant recommendations

Hi, We’re staying in the following towns with a rental car, and would like advice re restaurants in those areas. Great food is the most important thing! Polignano a Mare, Lecce, Ostuni, Matera. Thanks in advance!

My experiences are not recent, but I always look to food writers Elizabeth Minchilli and Katie Parla for info--both are familiar with the area. Le Zie in Lecce is what I call TFE--total food experience.

Pugliese restaurants we especially liked, but these recommendations are from six years ago:
 
Osteria Monacelle (our favorite place when staying in Ostuni for a week --- it's tiny)

Vicolo 45 in Ostuni (in a cave)

Osteria del Tempo Perso in Ostuni (once we had a snooty server, second time was great)

Trattoria Fiori di Zucca in Lecce (just outside the walls, we loved eating wild poppy leaves & wild hyacinth bulbs one spring ---- I'm sure there are even better places inside the walls, but we haven't eaten at them in 10 years)

Pizzeria Doppio Zero in Cisternino (different ancient grains used in the dough)

L’Antica Locanda in Noci (where we eat instead of in Alberobello)

Antichi Sapori in Montegrosso (worth a drive just to eat there, need a reservation, their kitchen garden is across the street & can be visited)
