Spending 8 days in Puglia this October. We have booked a self catering trulli near Ostuni. We are avid photographers. Open to any suggestions on places to visit.
Ostuni is lovely. I loved Trani also. You also have Locorotondo, Polignano a Mare, Alberobello, and across into Basilicata, Matera is a must. Some neat photog opportunities in Castellana Grotte. Lecce stunning. Puglia is fantastic, the opportunities for sight-seeing and photography are limitless.

Don't miss Gallipoli ... very photogenic. And wonderful, freshly-caught seafood.
I agree with all of the suggestions you've received so far. If you have time, you could travel beyond Gallipoli or Otranto to Santa Maria di Leuca. Thinking too about your trulli rental - we did that near Martina Franca and it was so isolated that it was a difficult to even get to the city for dinner--we got lost coming back in the dark because the roads were very narrow and confusing. I'd make sure that it's not too far off the beaten path. A GPS is an asset in this region!
