My husband and I have been to several vineyards and wineries in Tuscany and love seeing and understanding the production of wine from start to finish. We are looking for a similar experience but for our beloved prosciutto and pecorino. This could include farms raising the animals as well as production facilities. We are not interested in visiting Parma, but hope to find something in Tuscany instead, perhaps in the Florence/Siena area. We will have a car. Any suggestions? Google results all point to Parma.
Pienza is your village for Pecorino. It also happens to be one of my favorite spots in Tuscany!

There are also good Modena vinegar tours in Modena. We visited Villa San Donnino which was wonderful. As far as great eating cheese and Parma, we have found many appertivos in Bologna, Modena, Reggio Emilia and Parma have wonderful meat and cheese boards. We have fond memories of sitting at a wooden table in a beautiful square in Reggio Emilia and eating wonderful Parma ham and several cheeses.
