They're not the only place in Europe that does this. In Paris they have sheep (and goats) keeping the grass trimmed at the Tuileries Gardens, or at least they used to. I have pics of them from 2012.
I saw that too today. It's a great idea. Chances are there were herds of sheep grazing those hills for centuries before they found the archeological site.
