Please critique my Pugia itinerary

Day 1 fly into Bari, pick up rental car. drive to Matera (perhaps stop along the way in Altamura.
Day 2 tour Matera, hike park
Day 3 drive Ostuni, explore it, overnight in Locortondo
Day 4 drive to Monopoli, overnight in LOCOROTONDO
Day 5 drive to Lecce, tour and lunch then drive to Otranto for overnight
Day 6 drive along coast, maybe Gallipoli overnight Otranto.
Day 7 more touring of coast, overnight Otranto
Day 8 drive to Bari, return rental car, fly to Rome

This trip is planned for this May. Had difficulty finding accommodations in Monopoli and Ostuni, therefore chose LOCOROTONDO.
Is three night too long in Otranto?

I am surprised you had an easier time finding accommodations in tiny Locorotondo over those larger places, but it's pretty and you will love it I'm sure. I would just make sure you are prepared for translating parking signs if your place lacks dedicated parking. Funny aside, whenever anyone says you can never get a bad meal in Italy, I always think of Locorotondo, where I was given a sandwich that was inedible--to the trash it went. (Not that that says anything negative about the town, it was just one of those things!)
I never think three nights is too long anywhere, but you have plenty to full your days so I def don't think so here.
You might want to switch days 3 and 4.

I'd want more time in Lecce, but I don't know where to suggest you find that extra time.

Thanks for the suggestions. We can also come back by Lecce on our last day. And yes we will visit Alberello while in Locorotondo. I’ve read early or late would be better than the middle of the day. Maybe, we could have dinner there. Any restaurant suggestions?

I love Bari. If you can, I would spend time there touring the Old Town which is like no other.
You might check to see if there are any performances at the Opera House while you are there as well.
Honestly, 8 days in Puglia is not nearly enough!
