We've spent many weeks in Puglia over the years, but not a lot of time near Foggia, but here's what I can tell you.
The church of Santa Maria Assunta in Troia (45 minutes by car from Roseto Valfortore) is one of the many Pugliese Romanesque churches that we enjoy because its facade is decorated with a somewhat bizarre medley of sculpted animals, people, mythical beasts, and vegetation. We liked the town because it's basically just one long wide street and people were strolling along it (all dressed up, as I recall, on a Sunday).
Saepinum, a large area of ancient Roman ruins (1.5 hours away by car) is actually in Molise, but was well worth a day trip, especially since (in November, anyway) there was no one there except us and some grazing sheep.
We stayed in a small town in the Gargano (the larger Vieste is more than 2 hours by car from Roseto Valfortore) and explored the peninsula for several days. It was enjoyable to drive along the coast and see the fishing huts built out over the water, and the towns were interesting, but the forested interior seemed just like forests at home, so not that exciting, and the beaches (very popular and scenic in the summer) were hidden from the coast road and we didn't even go see them, partly because it was November.
