Planning May trip for 2 weeks plus with bike trip

My partner and I now have tentative flights from Orlando to Florence returning from Venice.
Upon arrival we are planning to stay a few nights in Sienna and Lucca,

Then go to the CT are for a few nights. Then a train to Balzano for a electric bicycle self guided 7 night tour from Bolzano to Venice. The tour is operated or sold? By bike tours.com. Then flying out of Venice.

Any suggestions? Comments?
