Planing day tours in mid Sept.

I will be in Florence for 5nights the last of Sept. My travel friends are not wanting to book tours as they want to stay flexible.They will buy train tickets to Cinque Terre in advance . I was interested in a day trip cooking tour. There are so many day tours, do these type of excursions get sold out that time of year? Thank you
